  2. Take 1 cup ripe mango pulp
  3. Make ready 1 cup curd/dahi
  4. Prepare 2 cups water
  5. Make ready 3 tbsp Chickpea flour/besan
  6. Prepare 1 -2 tsp Jaggery/sugar (optional)
  7. Take 1/2 tsp Red chilli powder
  8. Take 1/4 tsp Turmeric/haldi
  9. Get to taste Salt
  10. Take Ingredients for tempering:-
  11. Take 1 tbsp Ghee
  12. Get 1 tsp Cumin seeds
  13. Get 1 tsp Mustard seeds
  14. Prepare 1 inches Cinnamon stick/dalchini
  15. Prepare 1-2 Dry red chilli
  16. Prepare 1-2 Green chilli (optional)
  17. Get 7-8 Curry leaves
  18. Take 1/8 tsp (a pinch) Asafoetida
  19. Make ready 3 tbsp Chopped coriander leaves

Fajeto is a yogurt and ripe mango puree based Guajarati recipe which is delicious in taste. This kadhi is tangy and sweet in taste which serves with rice and phulkas. This kadhi is very popular in mango season which cooked with sour curd and chickpea flour (besan). Traditionally fajeto recipe is hot drink based on yogurt and ripe mango.

Steps to make Fajeto (Gujarati ripe mango curry):
  1. Steps for preparing curry:-
  2. In a big bowl, add 1 cup curd and chickpea flour,with the help of whisk mix well.
  3. Now add 1cup mango puree to the bowl and mix everything well,make sure there is no lumps in the batter.
  4. Add 2 cups of water,1/2 tsp chilli powder,1/4 tsp turmeric and salt to taste.(Am not using jaggery as my mango pulp is enough sweet to balance the sour taste of curd.If your mango pulp is not sweet enough or you like your curry to be more sweet feel free to add jaggery/sugar as per your taste)
  5. Whisk the mixture well,pour in a deep pan and turn on the gas to medium heat.
  6. Bring the mixture to boil,stir occasionally.
  7. When mixture starts boiling lower the heat and simmer for 8-10 minutes.
  8. Whisk mixture occasionally while simmering,to get smooth and lump free curry.
  9. While curry is simmering let's prepare tempering.
  10. Heat a small pan over medium heat,add 1tbsp of ghee to hot pan.
  11. Add 1tsp cumin seeds,1 tsp mustard seeds and 1/8 tsp hing.
  12. When cumin and mustard seeds starts spluttering add 7-8 curry leaves,1" cinnamon stick,2 dry red chillies,2 green chillies and stir for few seconds.
  13. Pour the tempering over simmering fajeto curry.
  14. Turn of the heat and garnished with 1-2 tbsp chopped coriander leaves.
  15. Serve fajeto curry with steamed rice.

Fajeto is a mango flavored kadhi from the Gujarati Cuisine. It is basically a ripe mango and yogurt based curry that is ghee tempered with basic spices to give a mildly sweet, tangy and hot dish. Fajeto is utterly delicious and tastes great with steamed rice. It is mostly served as a part of the Gujarati ras poori meal.
