  1. Heat oil on a pan,add panchforan,bay leaves and dry red chillies,let them crackle.
  2. Now add chopped raw mango and salt,stir well and cook it by covering the lid on low flame for two minutes.
  3. Add all dry spices except roasted coriander-cumin powder,jaggery and water,mix well and cook it for 5 minutes on medium flame and stir occasionally.
  4. Now sprinkle roasted coriander-cumin powder,mix well and cook for 2 minutes more.
  5. Spicy Mango Jaggery Chutney is ready to serve.Store it in an airtight container and keep it in refrigerator.
