- To make grated mango pickle,combine the grated mangoes,add termeric powder,add salt and mix it well.place the mangoes on a sieve,when cool and dry.now in a bowl add grated mango,add grated garlic,add kalaunzi
- Mix it well.and keep aside.now take a tawa add fenugreek seeds,add cumin seeds
- Add fennel seeds dry roast for 5-7 min.on low flame.now all the roasted ingredients put into the jar and coursly grind it.achar masala is ready.
- Now add achar masala, add kalaunzi,add salt,add red chilli powder
- Add asafoetida mix it again.now take a jar and fill the jar with pickle
- Now add oil,aroma is very strong.cool to room temperature pack this tightly in to jar.the oil should come above the mango mixture.let the pickle mature for another 2-4 days before you consume it.for all pickles,ensure that it stays covered with oil,that they stays good throughout the year.pickle is ready.
